There’s a reason that switching to fresh juice is one of the first steps a bar or bartender can take when looking for ways to improve their cocktails.  Fresh citrus juice is the most common type of souring ingredient you can find behind the bar.  Separating the sweet from the sour (i.e. not using Sweet & Sour Mix) allows for incredible flexibility and a fresher, more balanced cocktail.
