Garnishing Egg Whites
Cocktails with egg whites present some great opportunities for garnish that wouldn’t be possible with non-egg white drinks.
The Pisco Sour is a cocktail that is typically served with dots of bitters across the top of the egg white foam. With a toothpick you can make this more decorative, pulling it through the dots into a “heart” shape, or into starbursts. This is an extremely simple way to dress up any cocktail with egg whites. Simply dot bitters on the top of the egg white foam and use a toothpick to decorate. Of course, be sure to choose bitters that complement the cocktail and provide a nice aroma, as this will likely be the first thing your guest smells when they enjoy the drink.
The white foam of the egg whites is an excellent “blank canvas” that you can spray designs onto, using a stencil or not. Again, I typically use bitters for the color, but you could use many different ingredients provided they add the color you are looking for. It can be a bit tricky at first to master the correct distance to hold the stencil & bitters spritzer, but with practice you can achieve a pretty high quality result.
Floating Garnish Across the Top:
Since the egg whites provide a thicker surface, you can actually float lighter ingredients across the top, like some herbs or flowers. If using flowers, ensure they are edible before using to prevent risk of illness or unpleasant taste.
